Mix Veg Rice
1 cup rice
2 cups water
1 tbsp oil
1 large onion
1 cup mixed vegetables, (carrot, french beans, peas)
1/2 tsp turmeric powder
1 tsp lemon juice
salt to taste
Few cashew nuts n coriander leaves for garnishing.
Method of Preparation :
* Soak rice for 10 mins. before cooking and then cook, with water & lemon juice in the microwave for 16 minutes.
* Cook the mixed vegetables in ½ a cup of water for 7 mins.
* In another bowl add oil, onion, salt & turmeric powder & microwave for 4 minutes.
* Mix all the ingredients in another bowl & cook for 5 minutes.
* Allow it to stand for 5 minutes.
* Garnish with coriander leaves & cashew nuts.
* Serve hot with curd.
