Recipe Corner

Dum Aloo


Ingredients:
100gm Potatoes
1 cup of Water
1 cup of Ghee
2 Onions
5 tbsp Tomato puree
150ml Curd
1/2 cup hot water
1 Capsicum
1 1/4 tsp of Garam Masala
Oil for deep frying
Salt to taste

Spices:
4 green cardmom
1 piece cinnamon sticks
6 black peppercorn
4 bay leaves
4 cloves

Paste:
1 large Onion
10 Garlic flakes
2 tbsp Ginger
6 Black peppercorn
1 tsp Poppy seeds
1 tsp Coriander seeds
1 tsp Cumin seeds
2 dry red Chillies
1 tsp Turmeric powder

Method:
* Prick potatoes with fork & soak for 2hrs. in salted water.
* Then deep fry.
* Heat measured ghee in a pan & fry onion & all spieces until golden.
* Grind paste ingredients to smooth paste & stir in to onion.
* Cook for 10 mins. Stir tomato puree, curd & salt.
* Add the potatoes & hot water & stir over low flame for 5 mins.
* Sprinkle dum aloo with pepper & garam masala & cook for few mins.
